Smoked salmon is considered as a very refined food both in North America and in Europe. It is usually served in thin slices with red onion slices, lemon and capers.

The Canadian East coast salmon is one of world’s best. Cold smoking of prepared salmon fillets (30C) by direct exposure to smoke from maple wood combustion, does not cook the fish and maintains its delicate taste and very delicate texture.


Commercially smoked fish is clearly less tasty than our salmon which is smoked according to an old artisanal method.
